Is only the Bonneville longer than a Laurentian? I found some fairly old nos 1/4's and other panels for a Ventura/Catalina but am not sure if they will fit my car. Should I just buy them?

There has been discussion here about this exact thing for other years but I'm not sure that 1960 has come up. I know some guys have tried front fenders for later years and although there a very similar they say they won't work.
As far as 1/4's go I think they have said that they are not identical in length. For sure things like trunk drop off panels that connect to the 1/4 are different because the frame is so different on those cars.

As stated above, the frames are totally different & possibly the mounting is different, I know the 64 Bonniville is longer in the 1/4's than my 64 Catalina Also the frt. inner fenders are diff. than the Cdn. model as well, so would think the fenders will be "slightly" diff. as well !!!!

I figured, and I'm not a body man, but "my" body man would make a existing American rust free panel fit, rather than trying to form one from flat steel ......
As others have pointed out, the Bonneville quarters will be too long. However, the Strato Chief/Laurentian/Parisienne used essentially the same outer body as the Catalina/Ventura so you should be able to make those quarters work.
