My guess: It was done many years ago, before the car was considered collectible, to make it more useful to the owner. Lots of vehicles were modified back in the day when they were just 'cars', but the difference is that most of them ended up at the crusher before they became valuable classic cars for us to cherish. This one, somehow, survived to this day and is now waiting for a restoration by a new owner.
Windows probably added as he was tired of the HUGE blind spot when driving. Anyone who has ever driven a sedan delivery of this vintage knows what I'm talking about. My dad had a 56 Chevy delivery for many years.
