Hoo boy, now you're bringing back some memories. The jump in that first video happened at Atlantic Speedway in Lucasville (near Sackville) NS, and I was there that night.
It was a half mile paved oval, and basically my favourite place to go as a kid - I'd beg my Dad every week to take me there, and occasionally he'd get tired of my bugging him and give in. My childhood friend took to bugging his Dad as well, so we'd get to go more times that way (lol).
I recall a number of special events there, including Ken Carter's jumps, Benny the Bomb (https://www.caranddriver.com/features/a15125071/the-stuntman-who-blows-himself-up-inside-cars-feature/) blowing himself up in a Chevelle, T. Cake Cook (not sure if I got his name right - when I do a search all I get are recipes...) jumping a '67 or '68 Dodge Dart over a bunch of cars, demo derbies, etc. Of course what I liked the best was still the stock car racing.
(edit: Todd's comment reminded me of the Hell Drivers as well - in fact I have a program somewhere in my old hoarded stuff, that I got when I saw them in '71 or '72 while they were using Datsuns. Funny story - my Dad worked at the Datsun dealership -which had switched from Pontiacs in 1971 - when they came to town and he named the junk cars that they used for their crash stunt: "Junky Jim" - the car to be hit - and "The Wild One" - the car they were supposed to drive... when we were watching the show they couldn't get The Wild One to run, so Junky Jim ended up being the one that they drove... my Dad said "yeah, that figures"...)

I remember watching Wide World of Sports when Ken Carter was to jump the St. Lawrence Seaway. Evel Kneivel was there and just shook his head as the ramp was nowhere near being completed. I watched Devil At Your Heels way back when SuperChannel first started up in the early 80's, and watched it again on YouTube a few weeks again.
I think Ken knocked a few screws loose in some of his jumps.
Yes, it was a ton of fun seeing him do all his stunts.
