Why so much horsepower ? Take a motor or two off. Have say 2-300 hp but triple the range. Use the same batteries and electrical architecture.

 Do you own a big block? A 6 will do the job.

You'd have to look at what sort of loss (drag) you'd have by eliminating two motors and having a transfer case/differential/drive and axle shafts to transfer power to all the wheels as well as how much more amps one or two motors would pull instead of four to move the truck. There may not be much savings of power at all.

Electric motors are pretty efficient across a wide range of power output, so if youre only using 50 HP, the amperage draw would reflect that. If you were using 400 HP, the current draw would be roughly 8 times as much, and youd draw those batteries that much faster.
I suspect battery range would be more dependent on your right foot than on the HP rating of the motors. How good is your self control?

And weight- 2 less motors and I guess some mechanical reduction with 2 wd. Lower and improve the aerodynamics? But based on whats selling in new trucks, lower, 4wd, and an aerodynamic look wouldnt sell.
