I did it on a Skylark back when I was a kid. I almost changed the interior in my Laurentian to either white or black but figured it would be too much hassle changing the dash and headliner as well as trying to find nice door panels..
I don't have any issues i just don't know about the dash pad and steering wheel, All the other stuff like the headliner, seats can all be bought... i would think.
Bought a three on the tree, bench seat Duster with green guts. My brother had a head on crach with his. I took the auto tranny, buckets, console, power steering and complete black interior out of his and put it in mine. Was a fun car till the torsion bars pulled out of the frame
