What can i remove from the engine?

There are alot of things on my new engine i don't think i need like emisson control stuff what shold i remove. it's a early 80's engine i want it to make it look like a 60's engine what should i take off? Frankly i have no idea what im doing i just learned about 50's and 60's engine's...... such a learning cur...
